Cheese & Chive Scones

Rub 50g cold butter into 225g self-raising flour, and a big pinch of salt. With a butter knife, stir in 1tsp mustard powder, a pinch of cayenne, 80g finely grated cheese, and a small bunch of chopped chives. Pour in 150ml full-fat milk, all at once. Bring together with the knife. Tip out onto a floured surface. Knead lightly to combine. Flatten into a disc around 1.5cm high. Cut out circles and place on a baking tray lined with greaseproof paper. Brush the tops with milk, and sprinkle with salt. Bake at around 200C for 8-10 minutes. Cool on a wire rack
