Friday Night Fajita Feast!

Chicken Fajitas

  • 2 chicken breasts, cut into strips
  • 1 large onion, sliced
  • 1 large pepper, sliced
  • 1tsbp olive oil
  • 1tbsp butter
  • 3tsp Dunn’s River Barbecue seasoning
  • 2tbsp lime juice
  • salt and pepper
  • 1/2tsp dried chilli flakes
  • 3tbsp tomato puree
  • splash of hot water

Heat the oil and butter. Fry the chicken until just cooked. Add 1tbsp lime juice and 1tsp Dunn’s seasoning. Stir well and cook for a few minutes. Add the veggies and the remaining lime juice. Cook for 5 minutes until softened. Add the remaining seasoning, salt and pepper, chilli flakes, puree, and a splash of water. Toss together well. Cook together for another 10 minutes before serving.

Spicy Rice with Beans

  • 1 onion, diced
  • 1 garlic clove, minced
  • 1 birds-eye chilli, finely chopped
  • 1tbsp oil
  • 1tbsp butter
  • 1tsbp lime juice
  • 1tsp Dunn’s River Barbecue seasoning
  • salt and pepper
  • 1/2 cup of basmati rice
  • 2tbsp tomato puree
  • 1 cup of hot water
  • 1 x 400g tin of black eye beans

Heat the butter and oil. Fry the onion, garlic, and chilli until just soft. Add the rice, lime, and Dunn’s seasoning. Stir well and cook for 1 minute. Season and add the water, puree, and beans. Stir well. Cover with a lid and cook on the lowest heat for about 10 minutes, or until the water has been absorbed.

Guacamole (Hubs’ recipe!)

  • 1 large avocado
  • lime juice
  • salt and pepper
  • mayonnaise

Mash the avocado with lime, salt, and pepper. Add mayo. Stir well!

Salsa

  • 1/2 tin of chopped tomatoes
  • 3 spring onions, roughly chopped
  • 3 garlic cloves, smashed
  • 1 chilli, roughly chopped
  • 1tbsp lime juice
  • salt and pepper
  • 1/2tsp dried chilli flakes
  • 2tbsp tomato puree
  • 1tsbp good olive oil

Place all ingredients in a blender and blitz to the consistency you like!
