Back on Keto yesterday. Needed steak today. Served with cauliflower and broccoli cheese, steamed spinach, and garlic butter. Yum!
Cauliflower & Broccoli Cheese
- 600g cauliflower and broccoli florets
- 1 leek, sliced
- 80g button mushrooms, sliced
- 1tbsp butter
- 100g lacto-free cream cheese
- 100ml lacto-free cream
- 100g lacto-free cheese, grated
- salt and pepper
Place the florets in a large, microwaveable bowl. Cover loosely and cook for around 6-8 minutes, until just cooked. Tip into a large casserole dish.
Heat the butter and cook the leek and mushrooms for around 4 minutes, until softened. Tip this over the top of the florets. Top this with half of the grated cheese.
In a bowl, beat together the cream cheese and cream. Season well. Pour over the veggies, and smooth over. Top with the remaining cheese. Cook in a medium over for around 15-20 minutes, until the cheese is golden and bubbling.
This is how I cook steak: Heat a wide, dry, non-griddlie pan. Brush the steaks on both sides with minimal vegetable or sunflower oil. Once the pan is hot, put the steaks in and don’t touch them for 2 minutes! Flip them over, and season the cooked side with salt and pepper. Cook for 90 seconds. Flip again, and season the new cooked side. Turn off the heat. Cook for 30 seconds more. Flip for a last time, and rub the steak around the pan to mop up any extra salt and pepper. Leave to sit for a few minutes before serving. Any beef juice run off, just pour back over the steak! P.S. I like rare steak.
