- 225g self-raising flour
- 1/2tsp salt, plus extra
- 50g lactose-free butter
- 90g lactose-free cheese, finely grated
- Small bunch of fresh chives, finely chopped
- 2tsp mustard powder
- 1/4tsp Cayenne pepper
- 150g full-fat lactose-free milk, plus extra for brushing
Preheat the oven to gas mark 8.
Sift flour and salt together. Rub in the butter until it resembles fine breadcrumbs.
Stir in the cheese, chives, mustard, and Cayenne. Add all of the mill and bring together with a knife until it forms a cough. If sticky, add a little more flour.
Turn out onto a floured surface and knead briefly until smooth. Flatten with hands to a thickness of 1-2cm. Cut out rounds and place on a lines baking tray.
Bake for 10-12 minutes, until golden and cooked. Cool on a wire rack.
